Lives on my stove

I hadn’t expected this to become my go-to pan set but I have used it nearly daily since I bought it. I seasoned it with thin layers of oil wiped on with paper towel and then baked at low heat for 2 hours, then again all day on a rainy cold day. (I think it can be done faster, but this is how I did it.) Now it has a nice cooking surface and I use the top as a grill for pancakes, burgers, fish (quick cleanup immediately for fish) and cookies and pizza in the oven. I have used the bottom for oven roasting a small chicken, pasta sauce on the stove, etc. Once I burnt something badly (my fault) and I had to re-season, but that is so easy, I’m thrilled. I wash quickly right after using and, though some do not recommend, I use a bit of dishsoap and a sponge and it cleans up so easily, I’ve been surprised. I’ve had other cast iron brands and this is perhaps not as smooth, but compares favorably and I am very happy.

When I saw the name Jim Beam, I thought this was going to be a great pan. I had been looking at square pans to fry bacon in. I found this is not it. There was a hot spot about 3 inches in diameter that burned part of the slices in one area. The inner surface of the pan is very rough. Food sticks easily even though I seasoned the pan before using. The worst part, though, is cleaning the pan after cooking in it. Because the surface is so rough, there is always a layer of cooked-on food to scrub off. This requires a lot of elbow grease to clean. When I initially open the box, I wondered how that rough surface would work. I wish I would have returned it at that point, but I went ahead and used it. Now I'm trying to think of a way to get the surface smoother so I can use it again, although it sounds like a lot of work for someone who is 78 years old. I'm chalking this up to experience. :)
